Botanical description

The pistachio tree has wide-spreading branches but rarely exceeds 9 m in height. Each leaf typically consists of 1-5 pairs of thick, broad, leathery, pinnate leaflets. The fruits, known as drupes, are white and range in length from 1.5 to 2 cm. They often have a tendency to split on one side without releasing the seed. The nut itself is covered by a thin, reddish skin that firmly adheres to a greenish kernel. The kernels are single, firm, and have a pleasant, slight resinous flavour.
